
About the Recipe
Steaming fish brings out its delicate flavour, without a need for oil or fat of any kind. Dressed with a piquant, tasty coriander sauce, this is a perfect dish for anyone watching his or her weight!

Ingredients
Red snapper fillet – 500 g (1 lb 1½ oz), sliced into 2.5 cm (1 in) thick slices
Marinade
Lemon juice – 1 tsp
Water – 100 ml (3⅓ fl oz / ⅔ cup)
Salt – a pinch
Ground black pepper – a pinch
Coriander sauce
Water – 150 ml (5 fl oz / ⅗ cup)
Coriander leaves (cilantro) – 150 g (5⅓ oz)
Olive oil – 1 tsp
Garlic – 2 cloves, peeled and finely chopped
Oyster sauce – 1 tsp
Salt – a pinch
Ground black pepper – a pinch
Corn flour (cornstarch) – 2 tsp, mixed with 4 Tbsp water
Preparation
Step 1
Prepare marinade. In a mixing bowl, combine ingredients and mix well. Place fish slices in to steep, then refrigerate and leave to marinate for 2 hours.
Step 2
Meanwhile, prepare coriander sauce. Using a blender, process water and coriander leaves and set aside.
Step 3
In a saucepan, heat oil over medium heat. Add garlic and fry until fragrant. Add blended coriander mixture and oyster sauce and stir to mix well. Bring to the boil, then reduce heat and leave to simmer for 2 minutes. Season with salt and pepper, then add corn flour mixture and stir until thickened. Remove from heat and set aside.
Step 4
Steam fish over high heat for 10 minutes, or until flesh is opaque and tender. Remove from heat and set aside.
Step 5
Spoon coriander sauce onto prepared serving plates, then arrange fish slices over. Garnish as desired and serve immediately.
